All Purpose Gravy

Gravy for MATAR PANEER / MATAR MUSHROOM / ALOO MATAR / TINDA

  1. Heat 2 tablespoons of oil, ghee, or butter in a heavy-based saucepan.
  2. Add ½ teaspoon jeera (cumin seeds) and 1 teaspoon ginger-garlic paste (optional).
  3. Add 1 part of the prepared gravy and heat it. Add 1-2 tablespoons of dhania (coriander) powder.
  4. After 5 minutes, add 2 parts of your choice of vegetables (matar, paneer, mushrooms, aloo, tinda, etc.).
  5. Sauté the items for a few minutes, then add a combination of water, cream, or malai (fresh cream), using about 1.5 parts of gravy for the desired consistency.
  6. Adjust salt, spices, and condiments according to taste.
  7. Bring the dish to a boil for a few minutes.
  8. Garnish with chopped coriander leaves and split or green chilies as per choice.
  9. Serve with rice, chapati, or naan.

For Dry Dishes:

  • Use 3.5 parts of vegetables for every 1 part of gravy with a little water.
  • Sauté the vegetables as above, then add the gravy.
